Curly Vegetables 2 oz wt    
Kelp, reconstituted ½ oz wt    
Sherry Poached Prawns 3 each    
Spicy Tomato Octopus 2 oz    
       
USE 2 OF THE FOLLOWING ITEMS:      
oysters on the ½ shell, shucked 3 each    
Citrus Singing Scallops 3 each    
Salpicon Clams 5 each    
Calamari Salad 2 oz    
       
crab claws, trimmed 2 each    
Lemon Wheels 2 each    
       
Romesco Sauce 1 fl oz    
Mignonette - Champagne 1 ½ tsp    

Fill bowl to rim with crushed ice.

Sprinkle curly vegetables and kelp across ice.

Place spicy tomato octopus in glass pixel dish and place in center of bowl.

Arrange remaining seafood around octopus.

Wedge lemon wheel into crab claw.

Put romesco and aioli into small pixel. Serve.
