Zig zag sauce across plate. Toss arugula and frisee with vinaigrette. Place in center of plate in a nice tight dome. Slice beef and enclose greens, laying slices slightly overlapping, finish with a slice on top. (ask chef to show you, this is a little tricky) Place 2 little piles of egg at opposite sides of plate. Place 2 little piles of tomato between eggs at opposite sides of plate. Place horseradish in center of carpaccio, sprinkle sauce with chives. Serve. |
