Heirloom or Vine Ripened Tomatoes, Sliced ¼ inch thick 1 each    
Port Madison Mozzarella Cheese, sliced ¼ inch ½ ball    
Fresh basil leaves 4 each    
Salt Mix As needed    
Black Pepper, from peppermill As needed    
Tomato Vinegar 5 drops    
Extra Virgin Olive Oil 1 TBSP    
       
       

Directions:

On a small salad plate, arrange the tomatoes, sliced mozzarella and basil layered as shown by chef. Sprinkle with salt and pepper. Drizzle with the tomato vinegar and extra virgin olive oil.

Serve.
