Sensitivity: Do not overheat cake or the center won’t be liquid.

Ingredients

Specs

Liquid Center Chocolate Cake 1 each    
Tuille 1 each    
Milk Chocolate Mousse 1 fl oz    
Caramel Sauce (see recipe Desserts) 2 fl oz    
powdered sugar, in shaker light dusting    
Milk Chocolate Curls 1 oz wt    
       

Place cake in 500° convection oven for 3 minutes to heat.

Pipe mousse into Tuille.

Drizzle caramel sauce across plate.

Invert warm cake onto center of plate.

Dust top of cake with powdered sugar.

Poke Tuille into center of cake.

Pile chocolate shavings on top of cake. Some will fall off onto plate, that’s good.

Serve.
