Ingredients

17 cups

 

Specs

tahini paste 2 cups    
water, warm 1 ½ cups    
cumin, ground 2 TBSP    
salt mix 3:1 5 tsp    
black pepper, fresh ground, fine 2 tsp    
garlic, fresh mince 3 TBSP    
       
yogurt, cow 2 cups    
lemon juice, fresh 1 ¼ cups    
olive oil 1 cup    
garbanzo beans, cooked, drained, rinsed 1 - 10 lb can    
       

Place all ingredients in mixing bowl and stir well to combine.

Puree in batches in robot coupe until very smooth.

Place puree in large bowl and whisk to combine batches of puree.

Place in a clean container. Label, date, initial and refrigerate.

Note: Be sure to blend batches of puree together to ensure even flavor.
