Sensitivity:  Do not over mix dough. Mix enough water to slightly moisten dough.

Ingredients

Specs

A:      
flour 2 ½ cups/19 oz wt    
salt mix 3:1 ½ tsp    
baking powder ¼ tsp    
B:      
lard ½ cup    
plugra butter 1/3 cup   Plugra
C:      
water cold 4 to 6 TBSP    

Combine "A" ingredients in mixer with paddle on low speed.

Add "B" ingredients and mix until butter and lard are incorporated and mixture looks grainy. Do not overmix.

Sprinkle water over dough, begin with 4 TBSP (note: add more if necessary to make dough form a ball.) and blend on low until just combined.

DO NOT OVERMIX.

Fold dough and press into round shape then place in a clean container. Label, date, initial and refrigerate.
