Ingredients

9 ¼ cups

18 ½ cups

Specs

eggs, whole 18 each 36 each  
       
allspice, ground ½ tsp 1 tsp  
cinnamon, ground 1 TBSP 2 TBSP  
nutmeg, fresh grated 1 tsp 2 tsp  
sugar, bakers special, superfine 1 cup 2 cups  
brandy ½ cup 1 cup  
heavy cream 4 cups 8 cups  
       

In a medium stainless steel bowl mix all ingredients together thoroughly.

Place in a clean container. Label, date, initial and refrigerate.
