Ingredients

1 ¼ cup

 

Specs

beets, cooked tender, peeled 1 lb wt    
water, cool ¾ cup    
salt mix 3:1 ¼ tsp    
white pepper, fine ground 1/8 tsp
       

Puree all ingredients in bar blender until smooth.

Sieve through fine chinoise (china cap).

Discard pulp.

Save puree.

Place in a clean container. Label, date, initial and refrigerate.
